Uva\u0159ili jsme si spole\u010dn\u011b na replik\u00e1ch a vizu\u00e1ln\u00edch rekonstrukc\u00edch st\u0159edov\u011bk\u00e9ho n\u00e1dob\u00ed menu o n\u011bkolika chodech, na kter\u00e9m jsme si tak\u00e9 v z\u00e1v\u011bru pochutnali. A\u010dkoliv je archoeskanzen data\u010dn\u011b koncipov\u00e1n do 12. stolet\u00ed, postihli jsme postupn\u00fd <strong>v\u00fdvoj kuchy\u0148sk\u00e9ho a stoln\u00edho n\u00e1dob\u00ed<\/strong> od 12. do konce 15. stolet\u00ed. Z toho d\u016fvodu tak\u00e9 recepty poch\u00e1zely p\u0159edev\u0161\u00edm ze 14. a 15. stolet\u00ed, abychom na nich mohli demonstrovat postupnou evoluci kucha\u0159sk\u00fdch p\u0159edpis\u016f a postup\u016f v d\u016fsledku prom\u011bny kuchy\u0148sk\u00e9ho vybaven\u00ed a n\u00e1dob\u00ed. Pov\u011bd\u011bli jsme si, <strong>\u010d\u00edm se \u010desk\u00e1 kuchyn\u011b li\u0161ila<\/strong> nap\u0159\u00edklad od francouzsk\u00e9, italsk\u00e9, anglick\u00e9 a jak\u00fd byl rozd\u00edl ve strav\u011b chud\u00fdch a nobility. D\u016fle\u017eit\u00fdm t\u00e9matem tak\u00e9 byl syst\u00e9m chod\u016f, p\u00e1rov\u00e1n\u00ed pokrm\u016f a jejich serv\u00edrov\u00e1n\u00ed. To jsme si mohli prakticky ozkou\u0161et v z\u00e1v\u011bre\u010dn\u00e9 \u010d\u00e1sti, kdy bylo t\u0159eba v\u0161echny nava\u0159en\u00e9 b\u00e1je\u010dn\u00e9 pokrmy zkonzumovat.<\/p>\n<div id=\"attachment_397\" style=\"width: 462px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-397\" class=\"wp-image-397 \" src=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0306-Enhanced-NR-300x200.jpg\" alt=\"\" width=\"452\" height=\"302\" srcset=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0306-Enhanced-NR-300x200.jpg 300w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0306-Enhanced-NR-1024x683.jpg 1024w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0306-Enhanced-NR-768x512.jpg 768w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0306-Enhanced-NR-1536x1024.jpg 1536w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0306-Enhanced-NR-2048x1365.jpg 2048w\" sizes=\"auto, (max-width: 452px) 100vw, 452px\" \/><p id=\"caption-attachment-397\" class=\"wp-caption-text\">I kdy\u017e byl ka\u017ed\u00fd z workshop\u016f trochu jin\u00fd, jeliko\u017e byl p\u0159izp\u016fsoben\u00fd na m\u00edru i samotn\u00fdm \u00fa\u010dastn\u00edk\u016fm, atmosf\u00e9ra byla poka\u017ed\u00e9 \u00fa\u017easn\u00e1.<\/p><\/div>\n<p>A\u010dkoliv byl optim\u00e1ln\u00ed po\u010det \u00fa\u010dastn\u00edk\u016f pl\u00e1nov\u00e1n pro p\u011bt, se\u0161li jsme se v o n\u011bco men\u0161\u00edm po\u010dtu, co\u017e se ale p\u0159\u00edzniv\u011b odrazilo na <strong>komorn\u011bj\u0161\u00ed atmosf\u00e9\u0159e<\/strong>. Pohodov\u00e9 vyzn\u011bn\u00ed workshopu nemohlo naru\u0161it ani, to \u017ee n\u00e1s n\u011bkolikr\u00e1t potr\u00e1pila d\u00fdmaj\u00edc\u00ed kuchyn\u011b, co\u017e ale k va\u0159en\u00ed &#8222;po staru&#8220; nedomysliteln\u011b pat\u0159\u00ed. Sobotn\u00ed workshop byl ur\u010den p\u0159edev\u0161\u00edm pro reenactory a p\u0159\u00edznivce &#8222;o\u017eiven\u00e9 historie,&#8220; kte\u0159\u00ed m\u011bli ji\u017e s va\u0159en\u00edm <strong>p\u0159\u00edmo na ohni<\/strong> alespo\u0148 z\u00e1kladn\u00ed zku\u0161enost. Ten ned\u011bln\u00ed byl otev\u0159en \u0161ir\u0161\u00ed ve\u0159ejnosti. V \u00favodu jsme se zah\u0159\u00e1li hypokratem z b\u00edl\u00e9ho v\u00edna a potom postupn\u011b nava\u0159ili ka\u0161i z bob\u016f, rozebieranou slepici, k\u0159epelku, kdoulov\u00fd a vi\u0161\u0148ov\u00fd maz.
