Proto jsem se tak\u00e9 rozhodla vystudovat obor historie na Filozofick\u00e9 fakult\u011b Univerzity Karlovy v\u00a0Praze. M\u016fj \u017eivotn\u00ed kon\u00ed\u010dek se tak prol\u00edn\u00e1 i s povol\u00e1n\u00edm, kde se nabyt\u00e9 v\u011bdomosti a zku\u0161enosti sna\u017e\u00edm popul\u00e1rn\u011b nau\u010dnou formou <strong>p\u0159edat dal\u0161\u00edm lidem<\/strong>. V\u00a0sou\u010dasn\u00e9 dob\u011b proto u\u010d\u00edm na z\u00e1kladn\u00ed \u0161kole d\u011bjepis a ob\u010danskou v\u00fdchovu a mus\u00edm se p\u0159iznat, \u017ee i kdy\u017e jsem vyzkou\u0161ela r\u016fzn\u00e1 zam\u011bstn\u00e1n\u00ed, tento obor se pro m\u011b v\u00a0sou\u010dasn\u00e9 dob\u011b stal tou pravou skute\u010dn\u011b napl\u0148uj\u00edc\u00ed volbou.<\/p>\r\n\r\n\r\n\r\n<div id=\"attachment_260\" style=\"width: 427px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-260\" class=\"wp-image-260\" src=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0899uprav-300x200.jpg\" alt=\"\" width=\"417\" height=\"278\" srcset=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0899uprav-300x200.jpg 300w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0899uprav-1024x683.jpg 1024w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0899uprav-768x512.jpg 768w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0899uprav-1536x1024.jpg 1536w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/IMG_0899uprav-2048x1365.jpg 2048w\" sizes=\"auto, (max-width: 417px) 100vw, 417px\" \/><p id=\"caption-attachment-260\" class=\"wp-caption-text\">Bez party skv\u011bl\u00fdch p\u0159\u00e1tel si uk\u00e1zky a ochutn\u00e1vky st\u0159edov\u011bk\u00e9 kuchyn\u011b neum\u00edm p\u0159edstavit.<\/p><\/div>\r\n<p>Ve voln\u00e9m \u010dase, kter\u00fd mi p\u0159i p\u00e9\u010di o rodinu, zahradu a dom\u00e1cnost zb\u00fdv\u00e1, se potom v\u011bnuji b\u00e1d\u00e1n\u00ed, psan\u00ed, va\u0159en\u00ed, experimentov\u00e1n\u00ed a reenactmentu. V\u00a0r\u00e1mci toho po\u0159\u00e1d\u00e1m gastro workshopy a uk\u00e1zky toho, jak mohla vypadat st\u0159edov\u011bk\u00e1 kuchyn\u011b. V\u00a0tom mi pom\u00e1h\u00e1 cel\u00e1 plej\u00e1da skute\u010dn\u011b b\u00e1je\u010dn\u00fd p\u0159\u00e1tel, se kter\u00fdmi m\u011b spojuje l\u00e1ska k\u00a0historii a dobr\u00e9mu j\u00eddlu. P\u016fsob\u00edm v\u00a0r\u00e1mci zapsan\u00fdch spolk\u016f Civitas Pragensis, Curia Vitkov a Doba Karlova. <strong>Jedn\u00edm historick\u00fdm obdob\u00edm to ale pro m\u011b nekon\u010d\u00ed!<\/strong> M\u00e1 fascinace d\u011bjinami se neomezuje pouze na st\u0159edov\u011bk, ale na celou f\u00e1zi v\u00fdvoje lidsk\u00e9ho druhu a\u017e k soudob\u00fdm d\u011bjin\u00e1m. Jeliko\u017e m\u00e1 ale den pouze 24 hodin, nemohu pojmout v\u0161e co by m\u011b zaj\u00edmalo, a tak se krom\u011b st\u0159edov\u011bku d\u00e1le zaj\u00edm\u00e1m p\u0159edev\u0161\u00edm o obdob\u00ed nejv\u011bt\u0161\u00ed sl\u00e1vy antick\u00e9ho \u0158\u00edma a 18. stolet\u00ed v\u00a0Evrop\u011b a Americe.<img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-540 size-medium\" src=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/462144706_122140088600327424_9149966170274564043_n-e1735245735856-296x300.jpg\" alt=\"\" width=\"296\" height=\"300\" srcset=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/462144706_122140088600327424_9149966170274564043_n-e1735245735856-296x300.jpg 296w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/462144706_122140088600327424_9149966170274564043_n-e1735245735856.jpg 659w\" sizes=\"auto, (max-width: 296px) 100vw, 296px\" \/> Badatelsky se orientuji jak na gastronomii, tak historick\u00fd v\u00fdvoj od\u011bvu, co\u017e jsem zu\u017eitkovala v\u00a0r\u00e1mci m\u00fdch t\u0159\u00ed publikac\u00edch, kter\u00e9 jsem vydala a v\u00a0\u0159ad\u011b popul\u00e1rn\u011b nau\u010dn\u00fdch \u010dl\u00e1nk\u016f zam\u011b\u0159en\u00fdch na d\u011bjiny ka\u017edodennosti a hmotnou kulturu oti\u0161t\u011bn\u00fdch v\u00a0r\u016fzn\u00fdch periodik\u00e1ch.<\/p>\r\n\r\n\r\n\r\n<p>V pr\u016fb\u011bhu studi\u00ed na Filozofick\u00e9 fakult\u011b jsem p\u016fsobila jako externistka v knihovn\u011b Vojenskohistorick\u00e9ho \u00fastavu, pozd\u011bji v Archivu st\u0159edo\u010desk\u00e9ho kraje. P\u0159i mate\u0159sk\u00e9 a rodi\u010dovsk\u00e9 \u201edovolen\u00e9\u201c jsem si potom vyzkou\u0161ela redaktorskou pr\u00e1ci v r\u00e1mci internetov\u00e9ho port\u00e1lu V\u00e1le\u010dn\u00edci star\u00fdch \u010das\u016f, kter\u00fd se zam\u011b\u0159oval na historickou militarii, kter\u00e1 mi je t\u00e9\u017e jako t\u00e9ma velmi bl\u00edzk\u00e1. Bohu\u017eel se web nepoda\u0159ilo udr\u017eet, proto\u017ee jeho druhou f\u00e1zi rozjezdu v r\u00e1mci crowfundov\u00e9 kampan\u011b p\u0159ekazila Rusk\u00e1 invaze na Ukrajinu. Jak se \u0159\u00edk\u00e1, <strong>n\u011bco kon\u010d\u00ed a n\u011bco jin\u00e9ho zase za\u010d\u00edn\u00e1<\/strong>. Pro m\u011b to byla cesta k projektu Gastronomie \u010desk\u00e9ho st\u0159edov\u011bku.<\/p>\r\n<h2><strong>Jak jsem se dostala k va\u0159en\u00ed?<\/strong><\/h2>\r\n\r\n\r\n\r\n<div id=\"attachment_527\" style=\"width: 433px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-527\" class=\"wp-image-527\" src=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/P1290044-300x234.jpg\" alt=\"\" width=\"423\" height=\"330\" srcset=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/P1290044-300x234.jpg 300w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/P1290044-1024x800.jpg 1024w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/P1290044-768x600.jpg 768w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2024\/12\/P1290044.jpg 1200w\" sizes=\"auto, (max-width: 423px) 100vw, 423px\" \/><p id=\"caption-attachment-527\" class=\"wp-caption-text\">Z po\u010d\u00e1tku jsem va\u0159ila doslova na zemi a ano, nesm\u011bly chyb\u011bt ani ahistorick\u00e9 placky.<\/p><\/div>\r\n<p>Jeliko\u017e m\u011b maminka v d\u011btstv\u00ed do kuchyn\u011b p\u0159\u00edli\u0161 nepou\u0161t\u011bla s od\u016fvodn\u011bn\u00edm, \u017ee bych j\u00ed ji zane\u0159\u00e1dila, co\u017e m\u011bla nejsp\u00ed\u0161 pravdu, nau\u010dila jsem se va\u0159it v r\u00e1mci m\u00e9ho velk\u00e9ho kon\u00ed\u010dku \u2013 reenactmentu. Tento pojem se voln\u011b vykl\u00e1d\u00e1, jako historick\u00e1 rekonstrukce n\u011bjak\u00e9ho d\u011bjinn\u00e9ho vojensk\u00e9ho konfliktu \u010di obdob\u00ed. <strong>Bylo mi osmn\u00e1ct let a jezdila jsem na rekonstrukce st\u0159edov\u011bk\u00fdch historick\u00fdch bitev s partou p\u0159\u00e1tel<\/strong>, kte\u0159\u00ed se tehdy naz\u00fdvali Soused\u00e9 pra\u017e\u0161t\u00ed. Jeliko\u017e zde p\u0159eva\u017eovali sp\u00ed\u0161e mu\u017ei, sklouzla jsem do jist\u00e9 m\u00edry to za\u017eit\u00e9ho kli\u0161\u00e9 v role \u017eeny \u2013 kucha\u0159ky, i kdy\u017e jsem jinak v r\u00e1mci vojensk\u00fdch uk\u00e1zek s m\u00fdmi mu\u017esk\u00fdmi p\u0159\u00e1teli bojovala bok po boku v r\u00e1mci vojensk\u00fdch uk\u00e1zek. Nakonec jsem zjistila, \u017ee mi nesta\u010d\u00ed na t\u011bchto akc\u00edch pouze uva\u0159it n\u011bco dobr\u00e9ho a tepl\u00e9ho do \u017ealudku, ale \u017ee bych se tak\u00e9 r\u00e1da dozv\u011bd\u011bla, <strong>jak se vlastn\u011b pokrmy va\u0159ili v dob\u011b husitsk\u00fdch v\u00e1lek<\/strong>, dob\u011b, kterou se tento spolek pokou\u0161el v r\u00e1mci uk\u00e1zek ztv\u00e1rnit. A tak za\u010dal cel\u00fd ten kolob\u011bh b\u00e1d\u00e1n\u00ed, experimentov\u00e1n\u00ed a dal\u0161\u00edho b\u00e1d\u00e1n\u00ed, ze kter\u00e9ho nevystupuji ani dnes. Jeliko\u017e se ale nev\u011bnuji pouze obdob\u00ed st\u0159edov\u011bku, rozhodla jsem se projekt od 1. ledna 2026 p\u0159ejmenovat na <strong>Culina Historica<\/strong>, jeliko\u017e n\u00e1zev l\u00e9pe vystihuje historickou pestrost epoch, kter\u00fdmi se zab\u00fdv\u00e1m.<\/p>\r\n<!-- \/wp:post-content -->\r\n\r\n<!-- wp:paragraph -->\r\n<h2><strong>Velk\u00e1 v\u00fdzva<\/strong><\/h2>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<p>V\u00a0dob\u011b, kdy jsem dokon\u010dovala rukopis Gastronomie \u010desk\u00e9ho st\u0159edov\u011bku, m\u011b ale postihla osudov\u00e1 r\u00e1na v\u00a0podob\u011b indikace lakt\u00f3zov\u00e9 a histaminov\u00e9 intolerance a pom\u011brn\u011b vz\u00e1cn\u00e9 alergie na p\u0161enici.\u00a0 <strong>Zji\u0161t\u011bn\u00ed mi doslova p\u0159evr\u00e1tilo \u017eivot na ruby<\/strong>, ale z\u00e1rove\u0148 znamenalo velkou \u00falevu, proto\u017ee se poda\u0159ilo ohalit, co vede k m\u00fdm z\u00e1va\u017en\u00fdm alergick\u00fdm reakc\u00edm kon\u010d\u00edc\u00edm v extr\u00e9mu i anafylaktick\u00fdm \u0161okem. Od t\u00e9 doby se sna\u017e\u00edm s obrovskou \u0159adou potravinov\u00fdch omezen\u00ed nau\u010dit \u017e\u00edt. Velice p\u0159ekvapuj\u00edc\u00ed pro m\u011b je zji\u0161t\u011bn\u00ed, \u017ee se s obdobn\u00fdmi probl\u00e9my pot\u00fdk\u00e1 \u010d\u00edm d\u00e1l t\u00edm v\u00edce lid\u00ed.
