Hrad skr\u00fdv\u00e1 fantasticky zachovalou <strong>\u010dernou kuchyni<\/strong>, kter\u00e1 byla sice vybudov\u00e1na a\u017e v 16. stolet\u00ed, ale jej\u00ed dispozice perfektn\u011b vyhovuje n\u00e1rok\u016fm na\u0161eho workshopu, stejn\u011b jako pom\u011brn\u011b dobr\u00e1 dostupnost pro \u00fa\u010dastn\u00edky z cel\u00e9 \u010cesk\u00e9 republiky. Krom\u011b toho, \u017ee m\u00e1 Lipnice \u00fa\u017easn\u00e9ho<strong> genia loci<\/strong>, star\u00e1 se o n\u011bj tak\u00e9 b\u00e1je\u010dn\u00fd kastel\u00e1n pan Marek Hanzl\u00edk, bez jeho\u017e spolupr\u00e1ce by realizace workshopu nebyla mo\u017en\u00e1.<\/p>\n<p>V sobotu a ned\u011bli prob\u011bhly dva b\u011bhy, kter\u00e9 m\u011bly sice obsahov\u011b stejnou n\u00e1pl\u0148, ale d\u00edky rozd\u00edln\u00e9mu slo\u017een\u00ed \u00fa\u010dastn\u00edku, byl ka\u017ed\u00fd s\u00e1m o sob\u011b unik\u00e1tn\u00ed. Vyu\u017eili jsme pln\u011b mo\u017enost\u00ed, kter\u00e9 n\u00e1m \u010dern\u00e1 kuchyn\u011b poskytuje, tak\u017ee jsme pokrmy va\u0159ili p\u0159\u00edmo na <strong>vyv\u00fd\u0161en\u00e9m topeni\u0161ti<\/strong> v replik\u00e1ch st\u0159edov\u011bk\u00e9ho keramick\u00e9ho n\u00e1dob\u00ed. \u0160ir\u0161\u00ed dataci 14. a 15. stolet\u00ed odpov\u00eddaly i od\u011bvy a kuchy\u0148sk\u00e9 vybaven\u00ed, je\u017e jsme p\u0159i va\u0159en\u00ed vyu\u017e\u00edvali. V r\u00e1mci workshopu jsme probrali v\u00fdvoj n\u00e1dob\u00ed a kuchy\u0148sk\u00e9ho n\u00e1\u010din\u00ed i prom\u011bnu a mo\u017enosti vyu\u017eit\u00ed rozli\u010dn\u00fdch <strong>technologick\u00fdch postup\u016f<\/strong> p\u0159\u00edpravy pokrm\u016f, kter\u00e9 s t\u00edm souvis\u00ed.<\/p>\n<div id=\"attachment_973\" style=\"width: 369px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-973\" class=\"wp-image-973\" src=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2026\/05\/IMG_0937-e1777913465198-300x218.jpg\" alt=\"\" width=\"359\" height=\"261\" srcset=\"https:\/\/culinahistorica.cz\/wp-content\/uploads\/2026\/05\/IMG_0937-e1777913465198-300x218.jpg 300w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2026\/05\/IMG_0937-e1777913465198-1024x744.jpg 1024w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2026\/05\/IMG_0937-e1777913465198-768x558.jpg 768w, https:\/\/culinahistorica.cz\/wp-content\/uploads\/2026\/05\/IMG_0937-e1777913465198.jpg 1470w\" sizes=\"auto, (max-width: 359px) 100vw, 359px\" \/><p id=\"caption-attachment-973\" class=\"wp-caption-text\">T\u011bsto lososov\u00e9 pa\u0161tiky pln\u00ed p\u0159i pe\u010den\u00ed funkci n\u00e1doby a b\u011b\u017en\u011b se konzumovala p\u0159edev\u0161\u00edm n\u00e1pl\u0148.<\/p><\/div>\n<p>Jeliko\u017e kuchyn\u011b nedisponuje pec\u00ed, rozhodli jsme se experiment\u00e1ln\u011b vyu\u017e\u00edt takzvan\u00fd &#8222;<strong>oh\u0148ov\u00fd zvon<\/strong>&#8222;, kter\u00fd se d\u00e1 vyu\u017e\u00edt k omezen\u00ed ho\u0159en\u00ed ohn\u011b tak, aby doutnaj\u00edc\u00ed uhl\u00edky umo\u017enily po del\u0161\u00ed dob\u011b jejich rozfouk\u00e1n\u00edm jeho op\u011btovnou obnovu. D\u00e1le se m\u016f\u017ee u\u017e\u00edt coby transportn\u00ed <strong>p\u00edcka<\/strong>, o \u010dem\u017e pojedn\u00e1 samostatn\u00fd \u010dl\u00e1nek, kter\u00fd v budoucnu naleznete v sekci <em>O st\u0159edov\u011bk\u00e9 gastronomii<\/em>. Tato keramick\u00e1 n\u00e1doba ale nen\u00ed pro \u00fazem\u00ed \u010cech zat\u00edm p\u00edsemn\u011b ani archeologicky dolo\u017eena. Jednalo se tedy pouze o technologick\u00e9 ov\u011b\u0159en\u00ed toho, jak lze n\u00e1dobu vyu\u017e\u00edt. Toho se ujal odborn\u00edk na slovo vzat\u00fd Martin Jel\u00ednek, kter\u00fd m\u00e1 bohat\u00e9 zku\u0161enosti s preparac\u00ed savc\u016f a ryb. Detailn\u00ed postup procesu a jeho historick\u00e9 pozad\u00ed v\u00e1m\u00a0 v budoucnu t\u00e9\u017e p\u0159ibl\u00ed\u017e\u00edm v samostatn\u00e9m \u010dl\u00e1nku v sekci <em>O st\u0159edov\u011bk\u00e9 gastronomii<\/em>. Jist\u011b tak\u00e9 nav\u00e1\u017eeme dal\u0161\u00edm v\u00fdzkumem a ov\u011b\u0159ov\u00e1n\u00edm nabit\u00fdch v\u011bdomost\u00ed formou <strong>experimentu<\/strong> v oblasti jin\u00fdch \u017eivo\u010dich\u016f.<\/p>\n<p>Vzhledem k tomu, \u017ee pr\u00e1v\u011b vrcholila sez\u00f3na <strong>smr\u017e\u016f<\/strong>, kter\u00e9 se dle p\u00edsemn\u00fdch pramen\u016f u\u017e\u00edvaly p\u0159i p\u0159\u00edprav\u011b \u0161i\u0161ek, rozhodli jsme se rekonstruovat i recept na jejich p\u0159\u00edpravu. P\u0159ekvapiv\u00e9 bylo zji\u0161t\u011bn\u00ed, \u017ee houby v pokrmu nebyly natolik chu\u0165ov\u011b ani aromaticky v\u00fdrazn\u00e9, jak jsme p\u016fvodn\u011b o\u010dek\u00e1vali a mo\u017en\u00e1 je chu\u0165ov\u011b zaj\u00edmav\u011bj\u0161\u00ed varianta, ve kter\u00e9 se do t\u011bsta m\u00edsto smr\u017e\u016f p\u0159id\u00e1vaj\u00ed <strong>h\u0159iby<\/strong>. Dal\u0161\u00ed novinkou, kterou si \u00fa\u010dastn\u00edci workshopu mohli vyzkou\u0161et, byla p\u0159\u00edprava oplatek v <strong>oplatkovnici<\/strong>. Testovali jsme r\u016fzn\u00e9 varianty t\u011bsta a dokonce se n\u00e1m z oplatek poda\u0159ilo svinout <strong>trubi\u010dky<\/strong>. Va\u0159ili jsme tak\u00e9 pokrmy, kter\u00e9 m\u00e1me ve st\u00e1l\u00e9m &#8222;reperto\u00e1ru,&#8220; jako je rozebieran\u00e1 slepice, ka\u0161e z bob\u016f, pu\u010d\u00e1lka, vep\u0159ov\u00e9 klob\u00e1sky a ka\u0161e rej\u017eov\u00e1.<\/p>\n<div>P\u0159\u00edjemn\u00fdm bonusem, kter\u00fd jsme spolu s \u00fa\u010dastn\u00edky workshopu z\u00edskali, jsou naprosto <strong>\u00fa\u017easn\u00e9 fotografie<\/strong>, je\u017e vytvo\u0159ila Kate\u0159ina Triss Postr\u00e1neck\u00e1 a s\u00e9rie vide\u00ed, kter\u00e1 do budoucna vyu\u017eijeme k populariza\u010dn\u00edm a v\u00fdukov\u00fdm \u00fa\u010del\u016fm. Snad se n\u00e1m po\u0161t\u011bst\u00ed, se na tuto n\u00e1dhernou a pro \u00fa\u010dely kon\u00e1n\u00ed workshopu, naprosto dokonalou lokalitu, do budoucna vr\u00e1tit.
